Instructions

  1. Cook the Rice: Rinse 1 cup of rice under cold water until the water runs clear. In a medium pot, combine the rice with 2 cups of water and bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 18 minutes until the rice is tender and the water has been absorbed. Remove from heat and let it stand, covered, for 5 minutes.
  2. Prepare the Bean and Corn Mix: Drain and rinse 1 cup each of canned black beans and corn. Set aside.
  3. Assemble the Bowl: Spoon the cooked rice into serving bowls. Top each bowl with the black beans and corn mixture, sliced avocado, and a generous dollop of salsa.
