Ingredients

Scale

Main Ingredients

  • 2 pounds tater tots (frozen)
  • ½ pound ground beef
  • 2 tablespoons taco seasoning
  • ½ cup refried beans
  • ½ cup corn
  • ½ cup black beans
  • ½ cup salsa
  • ½ cup sharp cheddar cheese
  • ½ cup Monterey Jack cheese

Toppings

  • Pico de gallo, as desired
  • Sour cream, as desired
  • Cilantro, as desired
  • Avocado, sliced, as desired
  • Jalapeño, sliced, as desired

Instructions

  1. Prep: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper to prevent sticking and make cleanup easier.
  2. Bake Tater Tots: Spread the frozen tater tots evenly on the prepared sheet pan. Bake them for 10 minutes, then toss to ensure even cooking and bake for an additional 10 minutes until they are golden and crispy.
  3. Cook Ground Beef: While the tater tots bake, heat a skillet over medium-high heat. Add the ground beef and cook it thoroughly until it’s evenly browned.
  4. Season Beef: Drain any excess grease from the skillet and add the taco seasoning to the cooked beef. Stir well to combine, allowing the flavors to meld.
  5. Assemble Nachos: Once the tater tots are baked, reduce the oven setting to broil. Spread the seasoned ground beef evenly over the tater tots. Then add layers of refried beans, corn, black beans, salsa, sharp cheddar cheese, and Monterey Jack cheese.
  6. Broil: Place the pan back in the oven under the broiler for about 5 minutes or until the cheese is melted and bubbly. Keep a close eye to prevent burning.
  7. Serve: Remove from the oven and top with fresh garnishes such as pico de gallo, sour cream, cilantro, avocado slices, and jalapeño slices to taste. Serve immediately for best flavor and texture.

Notes

  • You can customize the toppings based on your preference and dietary needs.
  • If you prefer a spicier dish, add more jalapeños or include a dash of hot sauce.
  • To make it vegetarian, omit the ground beef and add extra beans or veggies.
  • For crispier tots, you may broil a minute or two longer but watch carefully.
  • Use low-fat cheese or reduced-fat sour cream for a lighter version.
