  • 113 g Unsalted butter (4 oz), room temperature
  • 3 Large eggs
  • 1 tsp Vanilla extract

  • 250 ml Nutella or marmalade (1 cup)

Instructions

  1. Prepare Muffin Tins: Line muffin tins with cupcake liners, ensuring each cup is properly covered to prevent sticking.
  2. Preheat Oven: Preheat your oven to 220°C (425°F) to get it ready for baking.
  3. Mix Wet Ingredients: In a bowl, whisk together room temperature butter, sunflower oil, sugar, and vanilla extract until the mixture becomes smooth and creamy.
  4. Add Eggs: Incorporate the eggs one at a time into the wet mixture, whisking well after each addition to blend thoroughly.
  5. Add Dry Ingredients: Gradually add the all-purpose flour, baking powder, and a pinch of salt to the butter mixture. Stir gently until well combined, being careful not to overmix to maintain a tender muffin texture.
  6. Fill Muffin Cups: Spoon the batter into each lined muffin cup until they are about two-thirds full.
  7. Add Filling: Place approximately 1 tablespoon of your choice of filling (Nutella or marmalade) in the center of the batter mound in each cup.
