Instructions

  1. Prepare the base: Heat olive oil in a medium-sized soup pan over medium heat. Add chopped shallots and sauté until translucent and fragrant, about 3-4 minutes.
  2. Sauté vegetables and fruit: Add sweet potatoes, apples, and a good pinch of kosher salt to the pan. Sauté for about 3 minutes to combine flavors and slightly soften ingredients.
  3. Add broth and simmer: Pour in just enough low sodium vegetable broth to cover the sweet potatoes and apples. Bring to a simmer and cook until the sweet potatoes and apples are soft and tender, approximately 15-20 minutes.
  4. Blend the soup: Using an immersion blender, carefully blend the soup directly in the pot until perfectly smooth. Alternatively, allow the soup to cool slightly, then transfer to a blender in batches to puree until smooth. Add extra broth if the soup is too thick, stirring to combine.
