Ingredients

Scale

Steak Bites

  • 16 oz ribeye steak, cubed
  • 2 tbsp olive oil (for coating steak)
  • 2 tbsp steak seasoning
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme
  • 1 tbsp fresh parsley

Mashed Potatoes

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 8 tbsp butter
  • ½ cup milk
  • 1 cup sour cream
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper

Gravy

  • 2 cups beef broth
  • 4 tbsp butter
  • 1 cube beef bouillon
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp Worcestershire sauce
  • ¼ cup cold water
  • 3 tbsp cornstarch
  • Salt and pepper to taste

Instructions

  1. Prepare the Steak: Cube a well-marbled ribeye steak into bite-sized pieces. Coat the steak cubes lightly with olive oil, then toss them with your favorite steak seasoning evenly.
  2. Cook the Potatoes: Peel the Yukon Gold potatoes and cut into large chunks. Boil the potato chunks in salted water until they are soft and easily pierced with a fork, about 15-20 minutes.
  3. Mash the Potatoes: Drain the cooked potatoes and rice them or mash thoroughly. Add 8 tablespoons of butter, ½ cup milk, 1 cup sour cream, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy. Adjust seasoning to taste.
  4. Make the Gravy Base: In a saucepan, combine the beef broth, 4 tablespoons butter, one cube of beef bouillon, onion powder, garlic powder, and Worcestershire sauce. Bring the mixture to a simmer over medium heat.
  5. Thicken the Gravy: Mix cold water and cornstarch together to create a slurry. Slowly pour the slurry into the simmering broth while whisking continuously until the gravy thickens to a smooth, glossy consistency. Season with salt and pepper to taste.
  6. Cook the Steak Bites: Heat a skillet over high heat. Add the seasoned steak bites to the hot pan and cook, stirring every few minutes, until browned on all sides and cooked to desired doneness. Near the end of cooking, add 2 tablespoons butter, minced garlic cloves, fresh thyme, and fresh parsley. Stir well to coat the steak bites in the garlic herb butter.
  7. Serve: Plate the creamy mashed potatoes, top with the hot garlic herb steak bites, and drizzle generously with the rich beef gravy. Serve immediately while hot and enjoy.

Notes

  • Use ribeye steak for maximum flavor and tenderness due to its marbling.
  • Rising the potatoes ensures a creamy texture for the mashed potatoes.
  • Adjust the gravy thickness by varying the amount of cornstarch slurry.
  • For extra flavor, rest the steak bites for a few minutes before serving.
  • This dish pairs well with steamed green vegetables or a fresh salad.
