Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 6 ounces each)

Spinach Mixture

  • 3 cups fresh spinach, roughly chopped
  • 1 cup ricotta cheese
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for baking the chicken traybake.
  2. Prepare the Spinach Ricotta Mixture: In a bowl, mix the ricotta cheese, chopped spinach, minced garlic, olive oil, salt, and black pepper until well combined.
  3. Assemble the Traybake: Place the chicken breasts in a single layer on a large baking tray. Evenly spread the spinach ricotta mixture over the tops of the chicken breasts.
  4. Bake the Chicken: Put the tray in the preheated oven and bake for 25 to 30 minutes, or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C), and the topping is lightly golden.
  5. Serve: Remove from the oven and allow the chicken to rest for a few minutes before serving. This helps retain juicy tenderness.

Notes

  • For a richer flavor, add parmesan cheese to the ricotta-spinach mixture.
  • Baby spinach can be used in place of regular spinach for ease and texture.
  • Chicken thighs can be substituted for breasts but adjust baking time accordingly.
  • Ensure chicken is evenly spaced on the tray for uniform cooking.
  • Pair with a side of roasted vegetables or a fresh salad for a complete meal.
