Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Sauté Spinach Mixture: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the chopped spinach and cook until wilted, around 2-3 minutes. Season with salt, pepper, and dried oregano or dill if using. Remove from heat and allow the mixture to cool slightly.
  3. Roll out Puff Pastry: Lightly dust your work surface with flour. Roll out the thawed puff pastry sheet into a rectangle approximately 10 by 12 inches.
  4. Add Filling: Spread the cooled spinach mixture evenly over half of the puff pastry. Sprinkle the crumbled feta cheese evenly on top of the spinach layer.
  5. Fold and Seal: Fold the other half of the puff pastry over the filling to cover it. Gently press the edges to seal the pastry. Use a rolling pin to lightly flatten and even out the pastry.
