Quesadilla Ingredients
- 4 MorningStar Farms® Spicy Black Bean Burgers
- 8 (8-inch) tortillas
- 1 cup corn kernels
- 1 cup chopped fresh spinach
- 1 cup shredded cheese (colby jack or cheddar)
- Preheat Oven: Preheat your oven to 400°F (200°C). Line one or two cookie sheets with parchment paper and set them aside to prepare your quesadillas.
- Cook Black Bean Burgers: Grill the MorningStar Farms® Spicy Black Bean Burgers according to the package instructions to ensure they are fully cooked and flavorful. Once cooked, remove them from the grill and cut into small pieces.
- Assemble Quesadillas: Place four tortillas flat on the prepared baking sheets. Evenly distribute the chopped black bean burger crumbles, corn kernels, chopped fresh spinach, and shredded cheese over each tortilla. Then, top each with another tortilla to form quesadillas.
- Bake: Bake the assembled quesadillas in the preheated oven for 8 to 10 minutes, or until the cheese is melted and the tortillas are golden and crispy.
- Cool and Serve: Remove from oven and let the quesadillas cool for about 5 minutes. Then cut each quesadilla into wedges and serve warm.
Notes
- You can customize the veggies; try adding sautéed bell peppers or onions for extra flavor.
- For a vegan option, substitute the cheese with a plant-based cheese alternative.
- Use fresh or frozen corn kernels according to availability; just thaw frozen corn before use.
- To make it spicier, add some sliced jalapeños or a dash of hot sauce inside before baking.
- This recipe is great for meal prep; you can assemble quesadillas ahead and bake them when ready to eat.
