Ingredients

Scale

Chicken and Marinade

  • 2 pounds boneless skinless chicken thighs
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme

Vegetables and Garnishes

  • 2 medium zucchinis, sliced into half-moons
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Chopped green onions (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. Prepare Marinade: In a large bowl, whisk together the honey, soy sauce, olive oil, minced garlic, red pepper flakes, salt, black pepper, and thyme until well combined.
  3. Marinate Chicken: Add the chicken thighs to the bowl and toss to coat them evenly in the marinade. Let them marinate for at least 15 minutes, or up to 2 hours in the refrigerator for enhanced flavor.
  4. Arrange on Sheet Pan: Place the marinated chicken thighs on one side of the prepared sheet pan. Arrange the sliced zucchini on the other side. Drizzle any remaining marinade over the zucchini.
  5. Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F and the zucchini is tender.
  6. Broil (Optional): For extra caramelization on the chicken, broil for an additional 2-3 minutes, watching carefully to prevent burning.
  7. Garnish and Serve: Remove from the oven and let rest a few minutes. Garnish with sesame seeds and chopped green onions before serving.

Notes

  • For a spicier kick, increase the amount of red pepper flakes or add a dash of sriracha to the marinade.
  • You can substitute zucchini with other vegetables such as bell peppers or asparagus to add variety.
  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  • Marinate longer (up to 2 hours) to develop deeper flavors.
