Ingredients

Scale

For the Chicken

  • Grilled Sesame Chicken (prepared according to recipe)

For the Salad

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1/2 cup diced green onion
  • 3/4 cup freshly diced cilantro
  • 1 cup shredded carrots (bagged or cut into matchsticks)
  • 1 red bell pepper, thinly julienned
  • 1 jalapeno, seeded and diced

For the Dressing

  • 1 batch Sesame Ginger Dressing (prepared according to recipe)

For Serving

  • 1/3 cup toasted sliced almonds
  • 1/3 cup roasted cashew halves
  • Sesame seeds, for sprinkling
  • Extra cilantro, for garnish
  • Extra green onion, chopped, for garnish
  • A few jalapeno slices
  • Optional: Crispy wonton strips

Instructions

  1. Marinate the Chicken: Prepare the grilled sesame chicken marinade as per the referenced recipe. Marinate the chicken thoroughly to infuse it with sesame flavor.
  2. Prepare the Dressing: Make the sesame ginger dressing following the detailed recipe instructions. Set this dressing aside to allow flavors to meld.
  3. Assemble the Salad: In a large bowl, combine the shredded green and red cabbage, diced green onion, chopped cilantro, shredded carrots, julienned red bell pepper, and diced jalapeno. Pour the sesame ginger dressing over the veggies and toss well to evenly coat all contents. Cover the bowl and set aside while you cook the chicken.
  4. Cook the Chicken: Grill or bake the marinated chicken according to the original sesame chicken recipe until fully cooked and nicely charred or browned as preferred.
  5. Serve the Salad: Spread the dressed salad onto a large serving platter. Slice or chop the grilled chicken and arrange it on or alongside the salad. Garnish generously with toasted sliced almonds, roasted cashew halves, a sprinkle of sesame seeds, extra cilantro, chopped green onion, jalapeno slices, and optionally crispy wonton strips for added crunch. Serve immediately. Enjoy as a hearty main dish for 4 or a side dish for up to 6.

Notes

  • You can substitute the chicken with tofu or tempeh for a vegetarian version.
  • Adjust jalapeno quantity according to your heat preference.
  • Prepare the grilled sesame chicken and dressing ahead of time for quick assembly.
  • Crispy wonton strips add extra crunch but can be omitted to keep the salad gluten-free.
