Ingredients

Scale

Meat

  • 2 lb pork tenderloin

Seasoning and Oil

  • 1 tbsp Cajun seasoning
  • 2 tbsp vegetable oil

Sauce Ingredients

  • 1/2 onion, finely diced
  • 4 cloves garlic
  • 1/2 tsp red pepper flakes
  • 1/2 tsp dried oregano
  • 1 cup chicken broth (or vegetable broth)
  • 1 tbsp cornstarch
  • 2 tbsp water (to combine with cornstarch)

Instructions

  1. Preheat and Sear: Preheat the oven to 350°F (175°C). Heat the vegetable oil in a large pan over high heat to get it hot for searing.
  2. Season and Brown the Pork: Season the pork tenderloin evenly on all sides with Cajun seasoning. Place it in the hot oil and sear each side for about 1 minute until a golden crust forms.
  3. Bake the Pork: Cover the pan with a lid or aluminum foil and transfer it to the oven. Bake for 25-35 minutes until the internal temperature reaches 145°F (63°C) for safe and juicy pork.
  4. Sauté the Onion: Remove the pork from the pan and set aside. Place the pan with drippings back on the stove over medium heat. Add the finely diced onion and cook until translucent and softened.
  5. Add Aromatics and Simmer: Stir in the minced garlic, dried oregano, and red pepper flakes. Cook for 1 minute to release the flavors, then pour in the chicken broth and bring the mixture to a simmer.
  6. Thicken the Sauce: Mix the cornstarch with water to form a smooth paste. Stir this into the simmering sauce and continue to cook for 3-5 minutes until the sauce thickens to a smooth consistency.
  7. Serve: Slice the pork tenderloin and return the slices to the pan with the garlic sauce to coat them. Serve immediately while warm and enjoy this savory, flavorful dish.

Notes

  • Use a meat thermometer to ensure the pork tenderloin reaches an internal temperature of 145°F for safe and juicy meat.
  • If you prefer less spice, reduce or omit the red pepper flakes and Cajun seasoning.
  • This recipe works well with vegetable broth as a substitute for chicken broth for a lighter sauce.
  • For thicker sauce, increase cornstarch slightly but avoid lumps by stirring well to form a smooth slurry.
  • Let the pork rest 5 minutes after baking before slicing to retain juices.
