This dish combines the savory richness of the steak with the natural sweetness of roasted butternut squash, enhanced by the aromatic garlic and a touch of olive oil, ideal for a comforting and balanced meal.

Ingredients

Scale

For the Butternut Squash

  • 1 medium butternut squash, peeled and cubed (about 4 cups)
  • 4 cloves garlic, peeled and minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

For the Steak

  • 2 steaks (such as ribeye or sirloin), about 8 oz each
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the butternut squash and garlic.
  2. Prepare the Butternut Squash: Peel and cube the butternut squash into even-sized pieces for uniform roasting. In a mixing bowl, toss the squash cubes with minced garlic, 2 tablespoons of olive oil, salt, and freshly ground black pepper until everything is well coated.
  3. Roast the Squash: Spread the seasoned squash and garlic in a single layer on a baking sheet lined with parchment paper or foil. Roast in the preheated oven for 25-30 minutes, turning halfway through, until the squash is tender and lightly caramelized.
  4. Season the Steaks: While the squash is roasting, pat the steaks dry with paper towels. Rub both sides of each steak with 1 tablespoon of olive oil, then season generously with salt and black pepper to your taste preference.
  5. Cook the Steaks: Heat a heavy skillet or grill pan over medium-high heat until very hot. Add the steaks and cook for about 4-5 minutes per side for medium-rare, adjusting time for your preferred doneness. Use a meat thermometer if desired (130°F for medium-rare). Let the steaks rest for 5 minutes before serving to retain juices.
  6. Serve: Plate the roasted butternut squash alongside the cooked steaks. Optionally, drizzle with additional olive oil or a sprinkle of fresh herbs for extra flavor. Enjoy this hearty, balanced meal immediately.

Notes

  • For an extra flavor boost, add a sprinkle of smoked paprika or rosemary to the butternut squash before roasting.
  • Letting the steak rest after cooking helps keep it juicy and tender.
  • You can substitute garlic powder if fresh garlic is not available, using about 1 teaspoon instead.
  • Adjust roasting time depending on the size of squash pieces to avoid overcooking.
  • Pair this dish with a fresh green salad or steamed vegetables for a full meal.
