4.5 from 256 reviews

A refreshing and simple homemade strawberry sorbet made with fresh or frozen strawberries, a homemade simple syrup, and a hint of lemon juice. Perfect for a light, icy dessert to cool off on warm days.

Ingredients

Scale

Simple Syrup

  • 1 cup granulated sugar
  • 3 cups water

Main Ingredients

  • 5 cups fresh or frozen strawberries, cleaned and quartered (about 2 pounds)
  • 2 tablespoons lemon juice (or lime juice)

Instructions

  1. Prepare strawberries: Rinse strawberries thoroughly under cold water and quarter them. Set aside for later use.
  2. Make simple syrup: In a medium saucepan, combine the water and granulated sugar. Heat over medium-high heat, stirring continuously until the sugar is completely dissolved and the mixture just reaches a boil. Remove from heat and allow the syrup to cool to room temperature.
  3. Combine ingredients: In a large bowl, mix the cooled simple syrup with the lemon juice and the prepared strawberries, ensuring all ingredients are well incorporated.
  4. Blend ingredients: Transfer the strawberry mixture into a blender or food processor in small batches if necessary. Blend until the entire mixture is completely smooth and evenly pureed.
  5. Freeze sorbet: Pour the smooth strawberry mixture into a freezer-safe container. Place it in the freezer and allow it to freeze overnight or for at least 6 hours until firm.
  6. Store leftovers: Any leftover sorbet can be kept in the freezer for up to 2 weeks. Before serving, let it soften slightly for easier scooping.

Notes

  • Use fresh or frozen strawberries depending on availability; frozen berries might make the sorbet slightly icier.
  • Adjust the sugar quantity if your strawberries are very sweet or tart.
  • For an extra smooth texture, strain the blended mixture to remove seeds before freezing.
  • If you prefer a stronger citrus flavor, increase lemon or lime juice slightly.
