Instructions

  1. Season and Cook the Chicken: Pat the chicken dry with paper towels. Rub with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Heat a skillet over medium-high heat and sear the chicken for 4–5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).   2. Make the Jalapeño Peach Glaze: In the same skillet, add the diced peaches, jalapeños, honey, soy sauce, apple cider vinegar, and minced garlic. Stir and let the mixture simmer for about 5–7 minutes until peaches soften and the sauce thickens slightly. For a smoother glaze, mash some peaches with a fork or blend half the mixture, then return it to the pan. Stir in the cornstarch slurry until glossy and thickened.
  3. Combine Chicken and Glaze: Return the chicken to the skillet and spoon the peach-jalapeño glaze generously over each piece. Let everything simmer together for 2–3 minutes so the flavors meld beautifully.
