Instructions

  1. Prepare Pan: Line a 9×13-inch pan with foil or parchment paper and spray with nonstick cooking spray to ensure easy removal of the treats.
  2. Measure Cereal: Measure out 9 cups of Rice Krispies cereal and place them into a large mixing bowl.
  3. Melt Butter: In a large pot over medium-low heat, melt 8 tablespoons (113g) of unsalted butter, stirring gently to prevent burning.
  4. Add Marshmallows and Mix: Add 15 ounces (424g) of mini marshmallows to the melted butter and stir continuously until completely melted. Remove the pot from heat and quickly stir in the pistachio pudding mix and 1 teaspoon vanilla extract until fully combined.
  5. Combine Cereal and Marshmallow Mixture: Pour the marshmallow-pistachio mixture over the Rice Krispies cereal in the bowl. Stir thoroughly to coat all the cereal evenly with the mixture.
  6. Press Into Pan: Transfer the coated cereal into the prepared pan. Use a spatula or your hands (lightly sprayed with nonstick spray or covered with wax paper to avoid sticking) to press the mixture firmly and evenly into the pan.
  7. Set and Slice: Allow the treats to cool and set completely at room temperature until firm, about 30 minutes. Once set, slice into bars.
