Base
- 150g golden Oreo cookies (or plain / gluten-free biscuits)
- 60g vegan / dairy-free cream cheese
Coating
- 200g dairy-free white chocolate
Decorations
- Black food gel
- Orange food gel
- Strawberry laces or candy pencils (for the scarf)
- Prepare the tray: Line a baking tray with greaseproof paper and set it aside to keep the truffles from sticking during chilling.
- Crush the cookies: Using a food processor or blender, pulse the cookies until you get fine crumbs. If you don’t have electric equipment, crush the cookies with a rolling pin inside a sealed bag.
- Mix the truffle base: Transfer cookie crumbs into a large bowl and add the vegan cream cheese. Mix thoroughly until the mixture is sticky and holds shape when pressed.
- Shape the snowmen: With clean hands, roll 20g of the mixture into a larger ball, then roll 7g into a smaller ball. Stack the smaller ball on top of the larger one to form a snowman shape, placing them on the lined tray. Repeat for all truffles.
- Freeze to firm up: Place the tray in the freezer for about 20 minutes or until the truffles feel firm to the touch.
- Melt the white chocolate: Melt the white chocolate in a heatproof bowl over a saucepan with simmering water (bain-marie) or in short bursts in the microwave until smooth.
- Coat the truffles: Remove the snowmen from the freezer and either dip them into the melted white chocolate using a toothpick or drizzle the chocolate over them with a spoon while resting on a fork, ensuring full coverage. Repeat if desired for a thicker coating.
- Chill the coated truffles: Place the coated snowmen back onto the lined tray and return to the freezer for 5-10 minutes to set the chocolate shell.
- Prepare decoration colors: Tint a small amount of leftover white chocolate black and another with orange food gel, then transfer each into separate piping bags and snip off the ends for fine piping.
- Pipe facial features: Using the black chocolate, pipe eyes, mouth, and buttons on each snowman. Use the orange chocolate to create a small carrot-shaped nose.
- Add the scarves: Cut the strawberry laces or candy pencils to size and wrap them around the snowmen’s necks like scarves. Use a dab of melted white chocolate if needed to secure them.
- Final chill: Return the decorated truffles to the freezer for 5 minutes to let decorations set firmly.
- Serve and enjoy: Once set, serve these charming snowman truffles chilled and enjoy their delightful flavors and festive appearance!
Notes
- You can substitute golden Oreo cookies with plain or gluten-free biscuits based on dietary preferences.
- Use vegan or dairy-free alternatives for both cream cheese and white chocolate to keep the recipe vegan-friendly.
- If you don’t have a food processor, crushing the cookies manually with a rolling pin in a sealed bag works well.
- To pipe decorations smoothly, ensure the colored chocolate is warm but not too hot to prevent melting your truffles.
- These truffles are best stored in the freezer and consumed within a week for optimal freshness and texture.
- You can customize the scarves and decorations with different candies or food colors as desired.
