Instructions

  1. Prepare the tray: Line a baking tray with greaseproof paper and set it aside to keep the truffles from sticking during chilling.

  4. Shape the snowmen: With clean hands, roll 20g of the mixture into a larger ball, then roll 7g into a smaller ball. Stack the smaller ball on top of the larger one to form a snowman shape, placing them on the lined tray. Repeat for all truffles.
  5. Freeze to firm up: Place the tray in the freezer for about 20 minutes or until the truffles feel firm to the touch.
  6. Melt the white chocolate: Melt the white chocolate in a heatproof bowl over a saucepan with simmering water (bain-marie) or in short bursts in the microwave until smooth.
  7. Coat the truffles: Remove the snowmen from the freezer and either dip them into the melted white chocolate using a toothpick or drizzle the chocolate over them with a spoon while resting on a fork, ensuring full coverage. Repeat if desired for a thicker coating.
