Instructions

  1. Prepare the Pan: Line an 8-inch or 9-inch square baking dish with parchment paper, allowing the edges to overhang. This will help you lift the bars out with ease once set. For thinner bars, use a 9×13-inch pan instead.
  2. Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together, stirring until the butter is fully melted and the sugar dissolves. Stir in the vanilla extract.
  3. Add the Oats: Mix the rolled oats into the butter and sugar mixture. Cook on low heat for 3 to 4 minutes, stirring continuously until well combined.
  4. Layer the Oats: Pour half of the oat mixture into the prepared pan, spreading and pressing it down firmly to form an even base. Reserve the remaining oat mixture for the top layer.
  5. Melt Peanut Butter and Chocolate: In a small microwave-safe bowl, melt the peanut butter and chocolate chips together in short bursts, stirring frequently until smooth and fully combined.
  6. Add Chocolate Layer: Pour the chocolate-peanut butter mixture over the oat base evenly, reserving about 1/4 cup to drizzle on top later.
  7. Top with Remaining Oat Mixture and Drizzle: Spread the remaining oat mixture over the chocolate layer, pressing gently to adhere. Drizzle the reserved chocolate mixture over the top.
  8. Chill and Set: Refrigerate the bars for 2 to 3 hours or overnight to allow them to firm up. Before cutting into bars, let them come to room temperature slightly for easier slicing.
