Dry Ingredients
- 3 cups rolled oats
- 1/2 cup brown sugar, packed
Wet Ingredients
- 1 cup butter
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter
Chocolate
- 1 cup semisweet or dark chocolate chips
- Prepare the Pan: Line an 8-inch or 9-inch square baking dish with parchment paper, allowing the edges to overhang. This will help you lift the bars out with ease once set. For thinner bars, use a 9×13-inch pan instead.
- Melt Butter and Sugar: In a large saucepan over medium heat, melt the butter and brown sugar together, stirring until the butter is fully melted and the sugar dissolves. Stir in the vanilla extract.
- Add the Oats: Mix the rolled oats into the butter and sugar mixture. Cook on low heat for 3 to 4 minutes, stirring continuously until well combined.
- Layer the Oats: Pour half of the oat mixture into the prepared pan, spreading and pressing it down firmly to form an even base. Reserve the remaining oat mixture for the top layer.
- Melt Peanut Butter and Chocolate: In a small microwave-safe bowl, melt the peanut butter and chocolate chips together in short bursts, stirring frequently until smooth and fully combined.
- Add Chocolate Layer: Pour the chocolate-peanut butter mixture over the oat base evenly, reserving about 1/4 cup to drizzle on top later.
- Top with Remaining Oat Mixture and Drizzle: Spread the remaining oat mixture over the chocolate layer, pressing gently to adhere. Drizzle the reserved chocolate mixture over the top.
- Chill and Set: Refrigerate the bars for 2 to 3 hours or overnight to allow them to firm up. Before cutting into bars, let them come to room temperature slightly for easier slicing.
Notes
- Boiling time of the sugar and butter mixture is important: too short and bars will be too soft, too long and they become dry and crumbly.
- You can substitute natural peanut butter if preferred but it may alter the texture slightly.
- Use parchment paper for easy removal and clean slicing of bars.
- Store bars in an airtight container in the refrigerator for up to a week.
- For a nut-free version, substitute peanut butter with sunflower seed butter.
