For the Patties
- 3 tablespoons olive oil, divided
- 1 medium onion, diced
- 1 tablespoon garlic, minced
- 1 cup baby spinach, chopped
- 1 lb. ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup Greek yogurt
- 2 tablespoons fresh dill, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Sauté Onion and Garlic: Heat 1 tablespoon olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for an additional 30 seconds until fragrant.
- Mix Ingredients: In a large bowl, combine the sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly until well incorporated.
- Shape Patties: Form the mixture into approximately eight patties, each about half an inch thick, ensuring they hold together well.
- Cook Patties: Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Place the patties in the skillet and cook for 5 to 6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F / 74°C).
- Drain and Serve: Remove the patties from the skillet and drain on paper towels to remove excess oil. Serve warm, garnished as desired.
Notes
- Use fresh spinach for best flavor, but frozen chopped spinach (thawed and drained) can also be used.
- For a gluten-free version, substitute the breadcrumbs with gluten-free breadcrumbs or ground oats.
- You can substitute ground chicken with ground turkey or lean ground beef if preferred.
- Serve these patties with tzatziki sauce, a side salad, or wrapped in pita bread for a Mediterranean-style meal.
- To ensure patties hold together, avoid overmixing the meat mixture.
