Ingredients

Scale

Liquid Ingredients

  • 2/3 cup pineapple juice
  • 2/3 cup fresh squeezed lime juice (from 67 limes)
  • 1/2 cup orange juice
  • 1/2 cup aged or golden rum (or a blend of two rums)
  • 1/4 cup orgeat syrup
  • Dash or two orange bitters

Instructions

  1. Combine Ingredients: In a large glass measuring cup or bowl with a spout, mix together pineapple juice, fresh lime juice, orange juice, aged rum, orgeat syrup, and orange bitters until well blended.
  2. Fill Ice Pop Bags: Using a funnel, carefully pour the mixture into ice pop bags, filling up to the printed fill line or within 3/4-inch of the top zip to allow room for expansion. Stir the mixture well before filling each bag to ensure the flavors are evenly distributed.
  3. Seal and Arrange for Freezing: Seal each bag tightly and place them standing upright in a wide-mouth jar or glass to freeze. Though you can lay them down, freezing standing up prevents air bubbles forming inside the pops.
  4. Jostle and Invert During Freezing: After 30 to 45 minutes in the freezer, gently jostle and invert the bags once or twice. This prevents ingredient separation and keeps the texture consistent for a perfectly slushy treat.
  5. Freeze Overnight: Allow the pops to freeze overnight until very firm. Due to the alcohol content, the pops maintain a slightly slushy consistency and won’t harden completely solid.

Notes

  • Orgeat syrup is a sweet almond-flavored syrup that adds a distinctive nutty sweetness; it can be found in specialty stores or online.
  • The slightly slushy texture is intentional to retain the refreshing feel and because alcohol lowers the freezing point.
  • For non-alcoholic versions, substitute rum with pineapple or orange juice, but results will differ in texture and flavor.
  • Ensure the ice pop bags are sealed tightly to prevent freezer burn or leaks.
