Chocolate Mixture
- 6 oz (170 g) white chocolate chips
- 1 tsp coconut oil (or shortening)
- 3 drops lavender candy oil
- a few drops purple oil-based food coloring
- Melt Chocolate Chips: Add the white chocolate chips and coconut oil to a microwave-safe bowl. Microwave in 20-second intervals, stirring well between each, or melt using a double boiler method on the stovetop by placing the bowl over simmering water. Stir continuously until fully melted and smooth. Remove from heat once done.
- Add Lavender Oil and Colorant: Mix in 3 drops of lavender candy oil and a few drops of purple oil-based food coloring into the melted chocolate. This will infuse the chocolate with a gentle floral aroma and give it a lovely purple hue.
- Mix Well: Gently stir the chocolate until the lavender oil and food coloring are thoroughly incorporated and no streaks remain, ensuring an even color and flavor distribution.
- Transfer into Pastry Bag: Spoon the chocolaty mixture into a disposable piping bag and carefully snip off the tip to prepare for piping the chips.
- Pipe Chocolate Chips: Line a small cookie sheet with wax paper or parchment paper. Pipe small dots that resemble chocolate chips evenly spaced on the sheet until the entire mixture is used.
- Freeze Chocolate Chips: Place the cookie sheet in the freezer and chill for 10 to 15 minutes or until the chocolate chips have fully solidified.
- Release Chocolate Chips: Gently peel or bend the wax/parchment paper to release the solid chocolate chips. Transfer the chips to an airtight container for storage until ready to use.
Notes
- Use oil-based food coloring to prevent chocolate from seizing.
- If you don’t have lavender candy oil, you can substitute with a drop or two of lavender extract but adjust the amount cautiously as it can be potent.
- Store the chocolate chips in an airtight container in the freezer or refrigerator to maintain freshness and prevent melting.
- Do not overheat the chocolate to avoid burning or graininess.
- You can pipe larger or smaller chips depending on your desired use.
