Ingredients

Scale

Meatball Mixture

  • 1 lb ground chicken
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt

For Cooking

  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the proper temperature for baking the meatballs evenly.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, grated carrots, grated zucchini, breadcrumbs, egg, garlic powder, onion powder, and salt. Mix thoroughly until all ingredients are well incorporated.
  3. Shape Meatballs: Using your hands, form the mixture into small, bite-sized meatballs about 1-inch in diameter, perfect for toddlers to handle and eat.
  4. Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and place the meatballs evenly spaced on the sheet.
  5. Bake: Bake the meatballs in the preheated oven for 15-20 minutes, or until fully cooked through and lightly golden on the outside.
  6. Cool and Serve: Remove the meatballs from the oven and allow them to cool to a safe temperature before serving to toddlers.

Notes

  • Store leftover meatballs in an airtight container in the fridge for up to 3 days.
  • Freeze extra meatballs in a single layer on a baking sheet, then transfer to a freezer-safe bag for up to 3 months.
  • Serve with a mild dipping sauce such as plain yogurt or applesauce for added flavor.
