Instructions

  1. Cook the Eggs: Place the eggs in a saucepan and cover with cold water. Bring the water to a boil over medium-high heat. Once boiling, turn off the heat, cover the pan, and let the eggs sit for 10–12 minutes to hard boil.
  2. Cool and Peel: Drain the hot water and run cold water over the eggs to cool them quickly. Peel the eggs and chop them into small pieces.
  3. Mix the Base: In a medium mixing bowl, combine mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Stir until smooth and well blended.
  4. Combine with Eggs: Add the chopped eggs to the seasoned mayonnaise mixture and gently stir until the eggs are evenly coated.
  5. Add Cheese and Bacon: Fold in the shredded sharp cheddar cheese and half of the crumbled cooked bacon.
  6. Prepare for Baking: Preheat your oven to 350°F (175°C). Grease a baking dish and spread the egg mixture evenly in the dish.
  7. Bake the Dip: Bake the dip uncovered for 15–20 minutes until it is heated through, hot, and bubbly on top.
  8. Garnish and Serve: Remove the dip from the oven and sprinkle with the remaining bacon, chopped green onions, and a pinch of paprika. Serve warm with your choice of crackers, chips, or toasted bread slices.
