4.6 from 65 reviews

These homemade strawberry popsicles are a refreshing and naturally sweet frozen treat made from fresh strawberries, sugar, and water, with an optional hint of lemon juice for added brightness. Perfect for hot days, they are easy to make with just a blender and popsicle molds, offering a wholesome alternative to store-bought popsicles.

Ingredients

Scale

Ingredients

  • 1 ½ pounds fresh strawberries (washed, hulled, and chopped)
  • ½ cup granulated sugar
  • ½ cup water
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Prepare the Strawberry Mixture: Combine the fresh strawberries, granulated sugar, and water in a blender. If desired, add the lemon juice to enhance the flavor. Blend the mixture until it becomes smooth and well combined.
  2. Pour into Molds: Carefully pour the blended strawberry mixture into your popsicle molds, filling them evenly to ensure all popsicles are the same size.
  3. Insert Popsicle Sticks: Cover the molds with their lids, securing the popsicle sticks firmly in place so they will be centered as the mixture freezes.
  4. Freeze: Place the molds in the freezer and allow them to freeze solid for at least 5 hours, or overnight for best results.
  5. Release the Popsicles: When ready to serve, remove the mold from the freezer and run the outside under warm water for 10 to 20 seconds. This helps loosen the popsicles, making them easier to pull out without breaking.
  6. Serve or Store: Enjoy the popsicles immediately or individually wrap them in small plastic bags. Seal the bags tightly and keep them in the freezer to enjoy later as a quick and refreshing snack.

Notes

  • You can adjust the sugar quantity based on the sweetness of your strawberries or your taste preference.
  • Lemon juice adds a nice brightness but is optional; you can omit it if you prefer a sweeter flavor.
  • For a creamier texture, consider adding a splash of coconut milk or yogurt before blending.
  • If you don’t have popsicle molds, small paper cups and popsicle sticks can be used as an alternative.
  • Allow the popsicles to fully freeze to avoid partial melting during removal.
