Ingredients

Scale

Slider Assembly

  • 12 pack Hawaiian rolls
  • 24 dill pickles
  • 11 slices Colby jack cheese (or American cheese)
  • Sesame seeds (optional, for topping)

Meat & Seasoning

  • 2 lbs 80/20 ground beef
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper

Sautéed Onions

  • 1 large sweet onion, diced
  • 1 tablespoon butter

Butter & Sauces

  • 6 tablespoons butter (4 tbsp for toasting buns, 1 tbsp for onions, 1 tbsp for brushing top buns)
  • 1/2 cup mayonnaise
  • 1.5 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickled juice
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat and Prepare Buns: Preheat your oven to broil. Slice the Hawaiian rolls horizontally and place them cut side up on a lined baking sheet. Melt 4 tablespoons of butter and brush the cut sides of the rolls evenly. Broil them in the oven for 3-4 minutes until golden brown, watching carefully to avoid burning.
  2. Lower Oven Temperature: Reduce the oven temperature to 350°F to prepare for baking the beef.
  3. Season and Shape Beef: In a large mixing bowl, add the 2 lbs of 80/20 ground beef along with 1 teaspoon salt and 1 teaspoon cracked pepper. Mix well to combine. Press the seasoned beef evenly into a 9×13 casserole dish to form a slab.
  4. Bake the Beef: Place the casserole dish with the beef into the preheated 350°F oven and bake for 20 minutes until cooked through.
  5. Sauté Onions: While the beef is baking, heat 1 tablespoon of butter in a pan over low heat. Add the diced sweet onion and sauté gently for about 15 minutes, stirring occasionally, until the onions are browned and caramelized.
  6. Drain Beef: Once the beef is cooked, remove it from the oven and carefully drain off and discard any pan juices to prevent sogginess in the sliders.
  7. Assemble Sliders: On the baking pan with the toasted bottom buns, layer the dill pickles evenly. Using two spatulas, carefully lift and transfer the cooked beef slab onto the pickle-lined buns. Immediately top the beef with a double layer of cheese slices. Spread the sautéed onions evenly over the cheese. Close each slider with the top buns.
  8. Butter and Broil the Tops: Melt 1 tablespoon of butter and brush it over the top buns. If desired, sprinkle sesame seeds on top. Return the assembled sliders to the oven and bake at 350°F for an additional 15 minutes, or until the cheese has fully melted and the tops are warmed through.

Notes

  • Watch closely during broiling to prevent burning the buns.
  • Use 80/20 ground beef for ideal juiciness and flavor balance.
  • You can substitute Colby jack cheese with American cheese for a classic flavor.
  • Sautéing onions low and slow brings out their sweetness—do not rush this step.
  • Optional: add a drizzle of the prepared sauce (mayo, ketchup, mustard, pickled juice, cayenne mixture) inside the sliders for extra tang and spice.
