Instructions

  1. Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly moistened. Press the mixture firmly into the bottoms of a mini muffin tin lined with paper liners to form the crust bases.
  2. Make the Cheesecake Filling: In a large bowl, beat softened cream cheese with sugar until smooth and creamy. Add eggs one at a time, blending well after each addition. Stir in green food coloring until the mixture has an even bright green color.
