Ingredients

Scale

Vegetables

  • 1 pound white button or crimini mushrooms
  • 1 large green bell pepper, cut into 2-inch pieces
  • 1 large yellow bell pepper, cut into 2-inch pieces
  • 1 large yellow onion, cut into 2-inch pieces
  • 1 pint grape tomatoes
  • 1 small zucchini, cut into 1/2-inch rounds

Marinade

  • 1/4 cup olive oil, plus more for brushing grates
  • 1 tablespoon Cajun seasoning
  • 2 teaspoons red pepper hot sauce

To Serve

  • 4 cups cooked long-grain white rice

Instructions

  1. Prepare the Vegetables: Place mushrooms, bell peppers, onions, grape tomatoes, and zucchini in a large resealable plastic bag.
  2. Marinate the Vegetables: Add the olive oil, Cajun seasoning, and red pepper hot sauce to the bag with the vegetables. Massage the bag to evenly coat all the vegetables with the marinade.
  3. Preheat the Grill: Heat your grill to medium heat and brush the grates with additional olive oil to prevent sticking.
  4. Thread the Kebabs: Remove the vegetables from the marinade, reserving the marinade for basting. Thread mushrooms, peppers, onions, and tomatoes onto 8 skewers, alternating the ingredients evenly.
  5. Grill the Kebabs: Place the skewers on the grill and cook for 8-10 minutes, turning occasionally and brushing with the reserved marinade until vegetables are tender and slightly charred.
  6. Serve: Remove the kebabs from the grill and serve hot with 4 cups of cooked long-grain white rice. Enjoy your vibrant, spicy Cajun-style grilled mushroom kebabs!

  • Use a grill basket if you prefer instead of skewers for easier handling.
  • Serve with a side of fresh salad or your favorite dipping sauce for extra flavor.
  • For a gluten-free option, ensure the Cajun seasoning and hot sauce are gluten-free certified.
