Instructions

  3. Simmer the Soup: Return the seared short ribs to the pot. Add beef broth, Worcestershire sauce, bay leaf, and fresh thyme leaves. Season with salt and pepper. Bring to a boil, then reduce heat to low and let simmer gently for 2-3 hours until the meat is tender and falling off the bone.
  4. Shred the Meat: Remove the short ribs from the pot and shred the meat from the bones, discarding bones and excess fat. Return the shredded beef to the soup and stir to combine.
  5. Prepare for Broiling: Preheat the broiler. Ladle the hot soup into oven-safe bowls. Top each bowl with toasted baguette slices and a generous amount of shredded Gruyère or Swiss cheese.
  6. Bake the Cheese: Place the bowls under the broiler for 3-5 minutes or until the cheese is bubbly and golden brown.
