Garlic Butter Zucchini Skewers are a deliciously easy-to-make dish featuring fresh zucchini marinated in rich garlic butter and grilled to perfection. Tender with beautiful char marks, these skewers are perfect as a flavorful appetizer or side dish for summer barbecues or cozy dinners.

Ingredients

Scale

Vegetables

  • 2 medium zucchinis, sliced into thick rounds or half-moons

Garlic Butter Sauce

  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp fresh lemon juice

Instructions

  1. Prepare Your Ingredients: Wash the zucchinis thoroughly and slice them into thick rounds or half-moons ensuring consistent size for even cooking.
  2. Make the Garlic Butter: In a small saucepan over low heat, gently melt the unsalted butter. Add the minced garlic and simmer until fragrant, taking care not to let the garlic brown to avoid bitterness.
  3. Season Your Zucchini: In a large mixing bowl, toss the zucchini slices with the olive oil, salt, freshly ground black pepper, and the warm garlic butter mixture until they are well coated.
  4. Assemble the Skewers: Soak wooden skewers in water for at least 30 minutes (if using wooden) to prevent burning. Thread the seasoned zucchini pieces onto each skewer.
  5. Grill the Skewers: Preheat your grill to medium-high heat (around 400°F or 200°C). Place the skewers on the grill and cook for 8-10 minutes, turning occasionally until the zucchini is tender and has nice char marks.
  6. Serve: Remove skewers from the grill, drizzle fresh lemon juice over them, and serve hot as a flavorful side or appetizer.

Notes

  • Cut zucchini evenly for uniform cooking.
  • Always soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Allow zucchini to marinate in garlic butter for at least 30 minutes to maximize flavor.
  • Feel free to substitute or add other vegetables like bell peppers or cherry tomatoes for variety.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in the oven at 350°F for about 10 minutes.
