  • 1/2 red bell pepper, cut into 1 inch pieces

Sauce and Seasonings

  • 1/2 tsp ground ginger
  • 2 tsp minced garlic
  • 2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the cornstarch, chicken broth, soy sauce, and honey until well combined. Set aside.
  2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Sauté the chicken for 3-5 minutes until it is browned and cooked through. Remove the cooked chicken from the skillet and set aside on a plate.
  3. Cook the Vegetables: Reduce heat to medium-high and add the remaining tablespoon of olive oil to the skillet. Add the broccoli florets, yellow and red bell peppers, and shredded carrots. Cook, stirring occasionally, until the vegetables are tender but still crisp.
  4. Add Aromatics: Stir in the ground ginger and minced garlic with the vegetables. Cook for 1-2 minutes until the garlic becomes aromatic.
  5. Combine Chicken and Sauce: Return the cooked chicken to the skillet. Pour in the prepared stir-fry sauce and stir well to coat the chicken and vegetables evenly. Bring the mixture to a boil, stirring occasionally, and let it cook for 1 minute to thicken the sauce.
