  • 2 oz white chocolate candy coating

Instructions

  1. Melt Chocolate Mixture: Place the semisweet chocolate chips in a heatproof bowl set over a saucepan half-filled with simmering water. Stir continuously with a wire whisk until the chocolate melts completely and the mixture is smooth.
  2. Add Flavors: Remove from heat and stir in the Baileys Irish Cream, heavy cream, and vanilla extract until fully combined and smooth.
  3. Chill Mixture: Transfer the mixture to the refrigerator for 1 hour to firm up enough for shaping.
  4. Form Truffles: Line a tray with non-stick baking paper. Using a spoon, scoop out the chilled chocolate mixture and roll into truffle-sized balls. Place on the lined tray.
  5. Refrigerate Truffles: Loosely cover and refrigerate the truffles for 15–20 minutes or until firm to the touch.
  6. Melt Dark Chocolate Coating: In a bowl, melt the dark chocolate candy coating until smooth and ready for dipping.
  7. Coat Truffles: Dip each chilled truffle into the melted dark chocolate coating, gently shaking off any excess. Place the coated truffles back onto parchment paper to set.
  8. Let Set: Allow the dark chocolate coating to harden for about 15 minutes at room temperature.
  9. Decorate with White Chocolate: Melt the white chocolate candy coating in a small bowl. Transfer it to a small baggie and cut a tiny hole in one corner.
  10. Drizzle White Chocolate: Carefully drizzle the white chocolate over the truffles for a decorative finish.
  11. Store and Serve: Store the truffles in the refrigerator and serve cold. For longer storage, these truffles can also be frozen.
