Main Ingredients
- 12 oz. semisweet chocolate chips
- 4 Tbsp. Baileys Original Irish Cream liqueur
- 2 Tbsp. heavy cream
- 1/2 tsp. vanilla extract
Chocolate Coatings
- 1 pound dark chocolate candy coating
- 2 oz white chocolate candy coating
- Melt Chocolate Mixture: Place the semisweet chocolate chips in a heatproof bowl set over a saucepan half-filled with simmering water. Stir continuously with a wire whisk until the chocolate melts completely and the mixture is smooth.
- Add Flavors: Remove from heat and stir in the Baileys Irish Cream, heavy cream, and vanilla extract until fully combined and smooth.
- Chill Mixture: Transfer the mixture to the refrigerator for 1 hour to firm up enough for shaping.
- Form Truffles: Line a tray with non-stick baking paper. Using a spoon, scoop out the chilled chocolate mixture and roll into truffle-sized balls. Place on the lined tray.
- Refrigerate Truffles: Loosely cover and refrigerate the truffles for 15–20 minutes or until firm to the touch.
- Melt Dark Chocolate Coating: In a bowl, melt the dark chocolate candy coating until smooth and ready for dipping.
- Coat Truffles: Dip each chilled truffle into the melted dark chocolate coating, gently shaking off any excess. Place the coated truffles back onto parchment paper to set.
- Let Set: Allow the dark chocolate coating to harden for about 15 minutes at room temperature.
- Decorate with White Chocolate: Melt the white chocolate candy coating in a small bowl. Transfer it to a small baggie and cut a tiny hole in one corner.
- Drizzle White Chocolate: Carefully drizzle the white chocolate over the truffles for a decorative finish.
- Store and Serve: Store the truffles in the refrigerator and serve cold. For longer storage, these truffles can also be frozen.
Notes
- Use a heatproof bowl and gentle simmering water to avoid burning the chocolate.
- Chilling the mixture before rolling helps prevent stickiness and easier shaping.
- Ensure the truffles are fully firm before dipping to maintain shape and a smooth coating.
- Store leftover truffles in an airtight container in the refrigerator.
- For a non-alcoholic version, substitute the Baileys with Irish cream-flavored syrup or cream.
- Use good quality candy coatings or couverture chocolate for best texture and shine.
