Ingredients

Scale

Dry Ingredients

  • 1 and 3/4 cups (220g) all-purpose flour
  • 2 cups (400g) granulated sugar
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1 and 1/2 tsp baking powder
  • 1 and 1/2 tsp baking soda

Wet Ingredients

  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (120ml) boiling water
  • 100g dark chocolate, melted

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and sugar to ensure there are no lumps and the ingredients are well combined.
  3. Combine Wet Ingredients: In a separate bowl, beat the eggs lightly, then add the milk and melted butter. Stir in the melted dark chocolate until fully incorporated.
  4. Combine Wet and Dry Mixtures: Gradually add the wet ingredients to the dry, stirring gently to combine. Be careful not to overmix to keep the cake tender.
  5. Add Boiling Water: Carefully pour in the boiling water while mixing slowly. The batter will be thin, but this ensures a moist and fudgy cake.
  6. Pour Batter into Pan: Transfer the batter evenly into the prepared cake pan, smoothing the top with a spatula.
  7. Bake the Cake: Place the pan in the preheated oven and bake for 35 to 40 minutes, or until a skewer inserted into the center comes out clean.
  8. Cool Down: Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring onto a wire rack to cool completely.

Notes

  • For an extra chocolate kick, dust the top with cocoa powder or frost with your favorite chocolate ganache.
  • If you prefer a richer texture, substitute milk with buttermilk.
  • Make sure not to overbake to retain the moist, fudgy center.
  • Use room temperature eggs and butter for better mixing and texture.
  • Ensure the boiling water is added last to activate the cocoa and deepen the chocolate flavor.
