Instructions

  1. Cook Pasta: For stovetop, bring 2 cups water to a boil in a large pot, add salt, then stir in penne pasta. Cook for 10-12 minutes, stirring occasionally until al dente or desired tenderness. Drain any excess water and set pasta aside. For Instant Pot method, combine dry pasta, water, and salt in the pot ensuring pasta is mostly covered. Seal the lid and cook on high pressure for 4 minutes (based on halving stovetop cook time minus 1 minute for al dente). After cooking, wait 5 minutes before quick releasing remaining pressure. Drain excess water if present.
  2. Prepare Avocado Sauce: Combine the ripe avocado, lemon juice, olive oil (if using), garlic cloves, baby spinach or basil, salt, crushed black pepper, and 1/4 cup water into a food processor. Blend until smooth, adding additional water as needed to achieve a creamy sauce consistency. Optionally, parmesan cheese can be added during blending or later.
  3. Assemble the Dish: Add the prepared avocado sauce to the cooked pasta (in the Instant Pot insert or a mixing bowl) and toss thoroughly until the pasta is evenly coated with the creamy sauce. The dish is best served within 2-3 hours due to avocado’s tendency to brown.
