Instructions

  1. Prepare the Dough: In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until combined. In a separate bowl, whisk together the flour, baking powder, salt, and 1 teaspoon cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Chill the dough for at least 30 minutes to firm up.
  2. Roll Out and Add Filling: On a lightly floured surface, roll the chilled dough into a rectangle approximately 10×12 inches. Brush the melted butter evenly over the dough surface. In a small bowl, mix the brown sugar and cinnamon. Sprinkle this mixture evenly over the buttered dough.
  3. Form the Rolls: Starting from a long edge, carefully roll the dough tightly into a log. Wrap the log in plastic wrap and chill for at least 1 hour to firm up and make slicing easier.
  4. Slice and Bake: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Remove the chilled dough from the refrigerator and slice into 1/2-inch thick rounds. Arrange the slices evenly on the baking sheet, spacing them slightly apart. Bake for 12–15 minutes or until the edges are golden and the cookies are cooked through.
