Ingredients

Scale

Chia Pudding

  • 5 tbsp chia seeds
  • 1/2 cup coconut milk
  • 1/2 cup almond milk
  • 1/3 cup unsweetened apple sauce
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Sautéed Apples

  • 1 tbsp coconut oil
  • 2 apples, peeled and cut into cubes
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon

Instructions

  1. Prepare the chia pudding: In a bowl, whisk together the chia seeds, coconut milk, almond milk, unsweetened apple sauce, maple syrup, and vanilla extract until well combined. Cover and place in the refrigerator to set for at least one hour or overnight for best results.
  2. Heat coconut oil: Warm the coconut oil in a pan over medium-high heat to prepare for sautéing the apples, which will enhance their flavor.
  3. Sauté apples: Add the peeled and cubed apples to the pan along with the maple syrup and cinnamon. Cook, stirring occasionally, for 2 minutes over medium-high heat to start the caramelization process.
  4. Cook apples until soft: Reduce heat to medium and continue cooking the apples, stirring frequently for another 5-6 minutes until they become soft and caramelized. Remove from heat and allow them to cool slightly.
  5. Assemble and serve: Layer the set chia pudding and sautéed apples in small jars or a serving bowl. Enjoy immediately or refrigerate until ready to serve.

Notes

  • Using a blend of coconut milk and almond milk creates a perfect balance of rich creaminess and lightness in the chia pudding.
  • Choose unsweetened applesauce, either homemade or store-bought, to control added sugars.
  • Preheating the coconut oil before adding apples helps develop deeper flavors during sautéing.
  • Cook the apples for 5-8 minutes on medium heat until soft and fork-tender to achieve a caramelized texture.
