Ingredients

Scale

Cookie Dough

  • 1 ½ cups (333g) salted butter, softened
  • 1 ½ cups (345g) granulated sugar
  • 3 eggs
  • 1 ½ tsp cake batter flavoring
  • Pink food coloring, a few drops
  • 4 ½ cups (684g) all-purpose flour
  • 3 tsp baking powder

Frosting

  • ¼ cup (56g) butter, softened
  • 8 oz cream cheese, room temperature
  • 2 tsp vanilla extract
  • 4 cups (428g) powdered sugar
  • 1 pinch salt
  • Milk or heavy cream, a few teaspoons to thin
  • Christmas sprinkles, for decorating

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to ensure it is ready for baking the cookies.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar using a stand mixer or hand mixer until the mixture is light and fluffy, about 2 minutes.
  3. Add Eggs, Flavoring, and Coloring: Beat in the eggs, cake batter flavoring, and a few drops of pink food coloring until fully combined and the dough has a consistent pink color.
  4. Combine Dry Ingredients: Gradually add the all-purpose flour and baking powder into the wet mixture, mixing until the dough is thoroughly combined and smooth.
  5. Shape Cookies: Divide the dough into 3 tablespoon portions, roll each into a ball, then flatten slightly. Arrange the shaped dough evenly spaced on a cookie sheet lined with parchment paper or a silicone baking mat.
  6. Bake Cookies: Bake in the preheated oven for 9-11 minutes, or until the centers have puffed up and lost their glossy appearance. Remove from oven and allow to cool slightly.
  7. Make Frosting: While the cookies cool, prepare the frosting by whipping together the softened butter, cream cheese, and vanilla extract until smooth and creamy.
  8. Add Powdered Sugar and Adjust Consistency: Gradually add powdered sugar one cup at a time to the frosting mixture. Add a pinch of salt and then thin the frosting with a few teaspoons of milk or heavy cream until desired spreading consistency is reached.
  9. Pipe Frosting and Decorate: Transfer the frosting to a piping bag fitted with a round tip. Pipe frosting onto the still warm cookies in a spiral pattern starting from the center outward. Immediately top with Christmas sprinkles to decorate.

Notes

  • Ensure butter and cream cheese are at room temperature for smooth frosting.
  • Use gel or liquid food coloring sparingly to achieve desired pink shade without altering dough consistency.
  • Cream batter flavoring enhances the sweet vanilla-like taste, but can be omitted or substituted with vanilla extract.
  • Cookies should be baked just until centers are no longer glossy to maintain softness.
  • Warm cookies help the frosting adhere better and create a slight melting effect for extra deliciousness.
  • Store cookies in an airtight container; best enjoyed within 3 days for optimal freshness.
