Chinese Scallion Chicken is a flavorful, quick, and easy dish featuring tender boneless chicken breasts marinated in a savory soy-based sauce, then stir-fried with fresh scallions, garlic, and ginger. Perfectly balanced with a light sesame aroma and a touch of tang from rice vinegar, this dish is ideal for a delicious weeknight dinner served alongside rice or noodles.

Ingredients

Scale

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch

Aromatics and Cooking

  • 45 scallions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine soy sauce, rice vinegar, sesame oil, and cornstarch. Add the chicken breasts, ensuring they are thoroughly coated with the marinade. Let them marinate for at least 15 minutes to absorb all the flavors.
  2. Prepare the Aromatics: While the chicken is marinating, chop the scallions and mince the garlic and ginger finely. Keep these ready for when you start cooking.
  3. Heat the Oil: Heat the vegetable oil in a large skillet or wok over medium-high heat until hot but not smoking.
  4. Cook the Chicken: Add the marinated chicken breasts to the hot skillet. Cook for approximately 5 to 7 minutes on each side, or until the chicken is golden brown and fully cooked through; the internal temperature should reach 165°F (75°C).
  5. Add the Aromatics: Once the chicken is cooked, add the garlic, ginger, and chopped scallions to the skillet. Stir-fry for 2 to 3 minutes until they become fragrant and slightly tender.
  6. Thicken the Sauce: Pour any leftover marinade into the skillet and let it simmer for a few minutes until the sauce thickens slightly and coats the chicken evenly.
  7. Serve: Remove the skillet from heat and let the chicken rest for a minute. Slice the chicken breasts and serve with the scallion sauce poured over, accompanied by steamed rice or noodles.

Notes

  • For best flavor, marinate the chicken for up to 1 hour if time permits.
  • Use fresh scallions for the brightest taste; both white and green parts work well.
  • If you prefer a spicier dish, add some sliced chili or a dash of chili flakes when adding the aromatics.
  • Make sure not to overcook the chicken to keep it tender and juicy.
  • This recipe can be doubled or halved easily to suit your needs.
