Fudge Base

Instructions

  1. Prepare the Base Mixture: In a large saucepan, melt the unsalted butter together with granulated sugar, heavy whipping cream, and a pinch of salt over medium-high heat. Bring the mixture to a boil, then once boiling, add the cherry flavored gelatin and continue boiling for 5 minutes to fully incorporate the gelatin and dissolve the sugar.
  2. Combine with White Chocolate and Fluff: Remove the saucepan from heat after 5 minutes. In a separate mixing bowl, place the white chocolate chips and marshmallow cream. Pour the hot butter and sugar mixture over these ingredients and whisk vigorously until the mixture is smooth, creamy, and all the white chocolate chips have melted completely. Gently fold in the dried cherries to evenly distribute them throughout the fudge base.
  3. Set the Fudge: Line a 9-inch square pan with parchment paper. Pour the prepared fudge mixture into the prepared pan, spreading it evenly. Next, pour the melted dark chocolate over the top to create a rich chocolate topping layer. Place the pan in the refrigerator and chill for at least 4 hours or preferably overnight, allowing the fudge to firm up completely.
