These muffins combine a sweet, buttery crumb with fresh or frozen cherries for a delicious balance of flavors perfect for any time of day.

Ingredients

Scale

For the Muffins:

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg, lightly beaten
  • ¾ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups pitted cherries (fresh or frozen)

For the Streusel Topping:

  • ⅓ cup brown sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, softened

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Prepare your muffin tin by lining with paper liners or greasing it well to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk the lightly beaten egg, milk, melted butter, and vanilla extract together until smooth and well integrated.
  4. Combine Batter: Gently fold the wet ingredients into the dry ingredients just until combined. Be careful not to overmix to keep the muffins tender. Fold in the pitted cherries evenly throughout the batter.
  5. Prepare Streusel Topping: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the softened butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  6. Fill Muffin Cups: Spoon the muffin batter into the prepared muffin cups, filling each about three-quarters full. Generously sprinkle the streusel topping over each muffin.
  7. Bake: Bake the muffins in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely or serve warm.

Notes

  • Use fresh, frozen (unthawed), or canned pitted cherries based on availability.
  • Store muffins in an airtight container for up to 3 days or freeze for up to 3 months to maintain freshness.
  • To vary the flavor, add orange zest to the batter or substitute cherries with blueberries.
