Ingredients

Scale

Ground Beef Mixture

  • 2 pounds extra-lean ground beef
  • 2 jalapeño peppers, seeded and diced
  • 1 onion, diced
  • 4 cloves garlic, grated
  • 2 teaspoons kosher salt, or to taste
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper, or to taste

Thickening and Flavoring

  • 2 teaspoons cornstarch, optional (or flour)
  • 2 cups low-sodium chicken broth
  • 1 cup strained tomatoes (or diced tomatoes or ground tomatoes)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce

Topping

  • 1 cup shredded Cheddar cheese, divided
  • Red chili pepper flakes, for garnish
  • Chopped parsley, for garnish

Instructions

  1. Sauté Aromatics and Beef: Place the ground beef, diced jalapeño peppers, diced onion, grated garlic, kosher salt, ground black pepper, and cayenne pepper in a large braiser pan over medium-high heat. Cook, breaking up the beef with a wooden spoon, stirring regularly until most of the moisture evaporates and the mixture becomes crumbly and starts to brown, about 15 minutes.
  2. Add Broth and Tomatoes: Stir in the low-sodium chicken broth, cornstarch (if using), strained tomatoes, Dijon mustard, and Worcestershire sauce. Mix well to combine all ingredients thoroughly.
  3. Simmer to Thicken: Bring the mixture to a simmer, reduce heat to medium, and continue cooking while stirring occasionally until the mixture thickens to a dip consistency, approximately 25 minutes.
  4. Add Cheese and Broil: Sprinkle half of the shredded Cheddar cheese evenly over the surface of the dip. Use a fork to poke the cheese slightly down into the dip and stir lightly. Then, sprinkle the remaining cheese on top.
  5. Brown the Cheese: Place the pan under a preheated broiler and broil for about 5 minutes or until the Cheddar cheese is bubbly and browned to your liking.
  6. Garnish and Serve: Remove from the oven, sprinkle with red chili pepper flakes and chopped parsley for added flavor and color. Serve the dip hot, warm, or at room temperature with your choice of dippers such as crackers, tortilla chips, or vegetable sticks. Enjoy!

Notes

  • For a milder dip, reduce or omit jalapeños and cayenne pepper.
  • Cornstarch is optional but helps thicken the dip; flour can be substituted if preferred.
  • You can use diced or ground tomatoes if strained tomatoes are not available.
  • Use low-sodium broth to control the saltiness of the dip.
  • Make sure to broil carefully to avoid burning the cheese; keep an eye during the last few minutes.
