This recipe blends the savory flavors of French onion soup with hearty baked chicken for a satisfying meal perfect for any occasion.

Ingredients

Scale

Chicken

  • 3 boneless, skinless chicken breasts
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp oregano
  • A pinch of crushed chili pepper flakes
  • Salt and black pepper to taste

Onions and Topping

  • 2 tbsp unsalted butter
  • 5 large yellow onions, thinly sliced
  • 1/4 cup chicken broth
  • 4 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat and prepare: Preheat the oven to 400°F (200°C). Lightly spray a casserole dish with oil to prevent sticking.
  2. Season the chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. Season both sides evenly with garlic powder, onion powder, oregano, crushed chili flakes, salt, and black pepper. Place the seasoned chicken breasts in the prepared casserole dish.
  3. Caramelize onions: Heat a skillet over medium-high heat and melt the butter. Add the thinly sliced onions and cook, stirring occasionally, until they turn golden brown and caramelized. When the pan becomes dry, add the chicken broth to deglaze and continue cooking until the onions are richly browned.
  4. Add garlic: Stir in the minced garlic and cook for an additional 30 seconds until fragrant. Remove the skillet from heat and allow the onions to cool for about 5 minutes.
  5. Assemble and bake: Spoon the caramelized onions evenly over each chicken breast, covering them fully. Sprinkle mozzarella cheese on top. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F / 74°C) and the cheese is bubbly.
  6. Broil and garnish: For a golden cheese crust, broil the chicken for 2 minutes until the cheese turns slightly golden and crisp. Remove from oven and garnish with chopped fresh parsley before serving.

Notes

  • Make sure to pound the chicken breasts evenly for quicker and more consistent cooking.
  • Use low-sodium chicken broth to control the saltiness of the dish.
  • You can substitute mozzarella with Gruyère or Swiss cheese for an authentic French onion soup flavor.
  • Allow the onions to caramelize slowly for maximum sweetness and depth of flavor.
  • Let the chicken rest for a few minutes after baking to retain juiciness.
