Instructions

  1. Prepare the lemon: Wash and dry one lemon thoroughly. Use a zester or grater to zest the entire peel of the lemon carefully, avoiding the bitter white pith. Then, cut the lemon in half and juice only one half for the smoothie.
  2. Add ingredients to blender: Pour 2 cups of unsweetened almond milk into a high-speed blender first. Then add the 2 cups of blueberries (fresh or frozen), 1/2 cup of avocado chunks (fresh or frozen), the lemon zest and juice from half the lemon, 1/2 cup of plain Greek yogurt, 1 teaspoon of vanilla extract, 2 tablespoons of chia seeds, and 1/4 teaspoon of cinnamon. Include any optional protein or collagen powder if desired. Add ice if you are using fresh fruit instead of frozen to achieve a chilled smoothie.
  3. Blend until smooth: Blend all ingredients on high speed until the mixture is smooth and creamy. Check the consistency and flavor, and adjust by adding more liquid almond milk or ice if necessary, or a bit more lemon juice if you prefer a tangier taste.
