Ingredients

Scale

Squash

  • 1 spaghetti squash
  • 1 tablespoon olive oil

Toppings

  • 1 cup Stubbs BBQ Sauce
  • 1 cup cubed rotisserie chicken
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sliced red onion
  • Optional: fresh basil for garnish

Instructions

  1. Preheat the oven: Set your oven to 400 degrees Fahrenheit to prepare for roasting the spaghetti squash.
  2. Prepare the squash: Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle with 1 tablespoon of olive oil and rub it evenly all over the cut surfaces of the squash. Place each half cut side down on a baking sheet.
  3. Roast the squash: Bake the squash for 35-40 minutes until it becomes tender and can be easily pierced with a fork.
  4. Scrape the squash strands: Remove the squash from the oven and allow it to cool slightly. Using a fork, gently scrape the flesh to create spaghetti-like strands.
  5. Preheat the broiler: Change your oven setting to the high broiler to prepare for melting the toppings.
  6. Assemble the pizza squash: On each spaghetti squash half, spread 1/2 cup of BBQ sauce, sprinkle 1/2 cup of shredded mozzarella cheese, layer 1/2 cup of cubed rotisserie chicken, and scatter sliced red onions on top.
  7. Broil to melt cheese: Place the stuffed squash halves under the broiler for 5-6 minutes until the cheese is melted, bubbly, and slightly browned.
  8. Garnish and serve: Remove from the oven, garnish with fresh basil leaves if desired, and serve hot for a satisfying meal.

Notes

  • You can substitute the rotisserie chicken with shredded cooked chicken breast or thighs.
  • For extra flavor, mix some diced jalapeños or smoked paprika into the BBQ sauce before topping.
  • If you prefer a softer cheese topping, switch the broiler to a lower setting and broil slightly longer.
  • Leftovers can be stored in the refrigerator and reheated in the oven to retain crispness.
