Bars:
- 1/2 cup unsalted butter, softened
- 1 cup packed light or dark brown sugar
- 1 large egg, room temperature
- 1 1/2 tsp vanilla extract
- 1/2 tsp salt
- 1 cup all-purpose flour
- 1 cup mashed overripe bananas (about 2 large)
- 3/4 cup chocolate chips or chopped chocolate
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and grease it lightly with nonstick spray to prevent sticking.
- Cream butter and sugar: In a medium bowl, cream together the softened unsalted butter and packed brown sugar using an electric mixer or by hand until the mixture is light and fluffy, about 2 minutes. This helps create a tender texture.
- Add egg, vanilla, and salt: Mix in the large room temperature egg, vanilla extract, and salt until everything is fully combined and smooth.
- Incorporate the flour: Gently fold in the all-purpose flour just until incorporated. Be careful not to overmix to keep the bars tender and soft.
- Fold in bananas and chocolate chips: Fold in the mashed overripe bananas followed by 3/4 of the chocolate chips. Mixing gently preserves the texture and evenly distributes flavors.
- Transfer batter and add topping: Pour the batter into the prepared baking pan, smoothing it out evenly. Sprinkle the remaining 1/4 cup chocolate chips on top for a decorative and melty chocolate finish.
- Bake: Bake in the preheated oven for 33-37 minutes, or until the edges are golden brown and the center is set (a toothpick inserted should come out mostly clean with a few moist crumbs).
- Cool and serve: Allow the bars to cool completely in the pan on a wire rack. Once cool, lift out using the parchment paper and cut into 16 equal squares. Serve and enjoy!
Notes
- Use very ripe bananas with brown speckles for the best natural sweetness and moistness.
- Store the bars in an airtight container at room temperature for 3-4 days, or refrigerate for up to 1 week to extend freshness.
- They freeze well for up to 1 month; wrap tightly and thaw before serving.
- For gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
- To make the bars healthier, consider reducing sugar slightly or using dark chocolate chips.
