Ingredients

Scale

Seafood and Vegetables

  • 1 lb medium raw shrimp, peeled and deveined
  • 1 large head of broccoli, cut into florets
  • 2 garlic cloves, minced

Seasonings and Liquids

  • 1/2 lemon, juiced
  • 2 tbsp butter
  • 2 tbsp chicken broth, divided
  • Fresh parsley, chopped (for garnish)

Dry Seasoning

  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet for placing the foil packets.
  2. Prepare Foil Sheets: Cut two sheets of aluminum foil, each about 14 inches square, and lay them flat on your work surface.
  3. Make Seasoning Mix: In a small bowl, combine Italian seasoning, onion powder, smoked paprika, salt, and black pepper to create the spice mix.
  4. Season Shrimp: Toss the peeled and deveined shrimp in the seasoning mix until well coated, then distribute the shrimp evenly onto the center of each foil sheet.
  5. Add Broccoli and Garlic: Place the broccoli florets on one side of the shrimp on each foil sheet. Sprinkle the minced garlic over both the shrimp and broccoli.
  6. Add Lemon and Butter: Squeeze half a lemon’s juice evenly over the shrimp and broccoli. Top each packet with 1 tablespoon of butter and 1 tablespoon of chicken broth.
  7. Wrap Foil Packs: Carefully fold and seal the foil packets, making sure not to wrap them too tightly to allow steam to circulate.
  8. Bake: Place the foil packets on the baking sheet and bake in the preheated oven for 15 minutes, or until the shrimp is cooked through and opaque.
  9. Serve: Carefully unwrap the foil packets to avoid steam burns, garnish with freshly chopped parsley, and serve immediately.

Notes

  • Make sure not to overcook the shrimp; 15 minutes should be sufficient for medium shrimp sizes.
  • You can substitute chicken broth with vegetable broth or water for a lighter version.
  • If you prefer, add a sprinkle of red pepper flakes for a spicy kick.
  • Use fresh lemon juice for the best flavor rather than bottled lemon juice.
  • These foil packs are great for meal prep; just refrigerate and reheat gently before serving.
