Scale

Dip Ingredients

  • 2 cups whole milk ricotta
  • 1 cup grated parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 large egg, room temperature
  • Zest of 1 lemon
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon chopped fresh parsley
  • 12 pinches red pepper flakes

Instructions

  1. Prepare the oven and dish: Preheat your oven to 375°F (190°C). Lightly spray a small baking dish or oven-safe skillet with non-stick pan spray to prevent sticking.
  2. Combine ingredients: In a large mixing bowl, thoroughly stir together the ricotta, grated parmesan, olive oil, egg, lemon zest, fresh thyme, fresh parsley, and red pepper flakes until the mixture is smooth and well combined.
  3. Transfer and bake: Pour the ricotta mixture into the prepared baking dish, spreading it evenly. Place it in the preheated oven and bake for 15 to 20 minutes, until the top is set and lightly golden brown.
  4. Optional broil for color: For a more browned and slightly crisp top, you can broil the dip on high for about 1 minute after baking. Watch carefully to prevent burning.
  5. Serve warm: Remove from the oven and serve immediately with your choice of crackers, toasted bread, or fresh vegetable sticks for dipping.

Notes

  • Allow the egg to come to room temperature before combining to ensure even mixing and baking.
  • You can substitute fresh herbs with dried herbs, using about one-third the quantity.
  • For a spicier dip, increase the red pepper flakes to taste.
  • The dip can be prepared in advance and baked just before serving.
  • Serve warm for the best creamy texture and flavor.
