Ingredients

Scale

Salmon Fillets

  • 4 salmon fillets (6 ounces each), skin on

Marinade

  • ¼ cup Original PB2 Powdered Peanut Butter
  • 2 tablespoons water
  • 2 tablespoons olive oil
  • 1 tablespoon miso paste
  • 1 tablespoon seasoned rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon minced garlic
  • 1 teaspoon freshly ground black pepper

Garnish

  • ¼ cup peanuts, chopped
  • 1 tablespoon cilantro, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the salmon.
  2. Prepare Salmon: Place the salmon fillets into a deep dish with a tight-fitting lid and set aside.
  3. Make Marinade: In a medium bowl, whisk together the PB2 powdered peanut butter, water, olive oil, miso paste, seasoned rice vinegar, soy sauce, grated ginger, minced garlic, and freshly ground black pepper until fully combined.
  4. Marinate Salmon: Pour the marinade over the salmon fillets in the dish. Cover with the lid and refrigerate for at least 30 minutes to allow flavors to infuse; marinating overnight is recommended for deeper flavor.
  5. Arrange Salmon for Baking: Remove salmon from the marinade and arrange the fillets in a single layer on a deep 9×13-inch baking dish, leaving at least half an inch of space between each piece. Pour any remaining marinade over the fillets.
  6. Bake the Salmon: Place the baking dish in the preheated oven and bake for 20 minutes, or until the marinade has browned nicely and the fish feels firm to the touch.
  7. Garnish and Serve: Remove the salmon from the oven, sprinkle chopped peanuts and fresh cilantro over the top, and serve immediately with any pan juices for extra flavor.
  8. Enjoy: Savor your delicious baked peanut salmon alongside your choice of side dishes for a wholesome meal.

Notes

  • Marinate the salmon overnight for a more intense peanut and miso flavor.
  • Ensure the salmon is baked until it is firm but still moist inside to avoid overcooking.
  • Use fresh ginger and garlic for the best aromatic results.
  • This recipe pairs well with steamed rice or roasted vegetables.
  • For a gluten-free version, use gluten-free soy sauce.
