Wet Ingredients
- 1/2 cup applesauce
- 1/2 cup water
- 3 tbsp oil, nut butter, or additional water
- 1 tsp pure vanilla extract
- 2 1/2 tsp white or cider vinegar
- 1 1/2 cups finely diced apple (150g)
Dry Ingredients
- 2/3 cup flour (or low carb Keto muffins alternative)
- 1/2 cup protein powder
- 1/3 cup sugar, unrefined if desired
- 2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Preheat the oven: Set your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
- Mix wet ingredients: In a large bowl, whisk together the applesauce, water, oil (or nut butter/additional water), vanilla extract, vinegar, and the finely diced apples until well combined.
- Combine dry ingredients: In a separate bowl, stir together the flour, protein powder, sugar, cinnamon, baking powder, baking soda, and salt.
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring just until the mixture is evenly combined. Avoid overmixing to keep muffins tender.
- Fill muffin tin: Divide the batter evenly among the prepared muffin cups.
