Instructions

  1. Cook the vegetables: Heat olive oil or butter in a pot over medium heat. Add chopped onions, carrots, and celery, and sauté for about 5-7 minutes until soft and fragrant. Then add chopped tomatoes and cook for another 10 minutes until all the vegetables are tender, adding vegetable broth or water as needed to prevent sticking.
  2. Blend the vegetables: Once the vegetables are cooked and soft, transfer them to a blender or use an immersion blender directly in the pot to puree until smooth. Be careful when blending hot ingredients.
  3. Stir in cream: Return the blended soup to the pot if needed. Stir in the heavy cream and warm the soup gently over low heat. Season with salt and freshly ground black pepper to taste. Do not boil after adding the cream to preserve its richness.
